Lemony Chicken Pasta Toss

2 Tablespoons cornstarch
14 1/2 oz can of chicken broth
2 tablespoons lemon juice
1 Tablespoon Dijon mustard
2 cloves garlic, minced
16 oz boneless, skinless chicken breast, cut into strips
3 Tablespoons chopped fresh parsley
(OR 1 Tablespoon dried parsley)
8 oz thin spaghetti, cooked and well drained

Bring a large pot of water to boil for the spaghetti.
Cook the spaghetti so it will be ready when the
chicken and sauce are ready. In bowl, mix cornstarch,
chicken broth, lemon juice, mustard and garlic. Set
aside. In a 10 inch non-stick skillet, over medium-high
heat, brown chicken strips in 2 batches. Set aside.
Stir cornstarch mixture and add to skillet. Cook until
mixture boils and thickens, stirring constantly. Return
chicken to pan and heat through. Stir in parsley. Toss
with cooked spaghetti.
