Chinese-Style Chicken

CHINESE STYLE CHICKEN

2 boneless chicken breasts, cut in chunks
2 tbl sesame oil

1 carrot, sliced VERY thin
1 rib celery, sliced VERY thin
1 can Chinese baby corn

1/2 cup chicken broth
1 tsp minced garlic
1 tsp Chinese 5-spice powder (less would have been better!)
1 TBL hoisin sauce
2 TBL soy sauce (I used mushroom soy sauce)

1 handful peanuts
sprinkle of sesame seeds

Saute the chicken in the sesame oil. Remove from skillet and keep warm.
Saute carrot, celery and corn 1 minute. Add broth and garlic. When it comes to a boil, add spice, hoisin and soy sauce.
Cook on high heat until the sauce cooks down.
Replace chicken in sauce and add peanuts. Sprinkle sesame seeds on top.
Serve over rice.
