Express Orange Chicken

2 cups Brown OR Jasmine Rice
1 cup orange marmalade
1 tbsp white vinegar
1 tsp sriracha hot chili sauce
1 tsp ground ginger
2 tbsp low sodium soy sauce
1 - 10 oz pkg frozen broccoli cuts
1 lb. boneless skinless chicken breast, cut into 1" pieces
1 egg, beaten
1/2 cup cornstarch
1/4 cup flour
1/2 tsp kosher salt
1/2 tsp black pepper
oil for frying

Prepare rice according to pkg. directions. In a medium bowl combine marmalade, vinegar, hot sauce, ginger, and soy sauce. Mix thoroughly and set aside. In a small bowl combine the chicken with egg and coat thoroughly. In another bowl combine the cornstarch, flour, salt and pepper. Remove the chicken from the egg and coat with cornstarch mixture. Heat 1 inch of oil in a 4 quart pan to 375 degrees. Fry the chicken in batches till light golden brown on all sides. Remove cooked chicken and place on paper towels to drain. In a large bowl toss the chicken with the broccoli, marmalade mixture and the rice....Serve and enjoy! Serves 4 to 6
