Italian Chicken

Italian Chicken

4 boneless chicken breast cut in long strips diagonally, marinate in 1 cup buttermilk and 1 1/2 tesp Italian herbs for 1 hour (or more)
1 cup seasoned bread crumbs (can crush seasoned croutons)
4 Tbsp. Olive oil (extra virgin)
3 Tbsp. corn starch or flour
2 cloves garlic minced
1/2 cup grated parmesan cheese
1 can artichoke hearts drained, but reserve juice & chopped
1 Tbsp. capers
1 can of diced tomatoes drained reserve juice.
(can use 1 fresh large tomato diced)
12 oz thin spaghetti cooked
1 cup reserved tomato's juice & artichoke's juice. If its not a full cup add water to equal 1 cup

Roll chicken pieces in crumbs and cook in oil, drain on paper towel. Mix 'juices' and buttermilk from marinade with flour, add to hot oil, stirring. Add to sauce the garlic, diced tomatoes, artichokes and capers.
Simmer till thickened and just bubbling, add parmesan cheese. Add salt & pepper to taste. Add chicken and simmer 5 minutes . Serve over cooked spaghetti.

Note: If sauce gets too thick add a little water, but don't over do it.
