Vivian's Italian Cream Cheese Chicken

4 boneless chicken breast
1/2 cup buttermilk
pinch of salt & pepper
Soak Chicken in Buttermilk and salt & Pepper for 30 minutes or more.

Beat together
8 oz. cream cheese (Neufatchel or low fat)
1/4 cup butter room temp.
1 Tbsp. minced garlic
1 tesp. Spicey Italian seasoning
1/2 cup Parmesan cheese grated (or more)
2 Tbsp. fresh chopped parsley

For bottom and top
1/4 cup seasoned bread crumbs divided
1 Tbsp. fresh chopped parsley optional

Preheat oven to 350'
Spray baking dish with Pam or store brand oil. Sprinkle 1/2 of the bread crumbs evenly in bottom of baking dish. Arrange chicken; pour buttermilk over chicken. Spread Cheese mixture on each chicken breast evenly. Sprinkle top with remaining bread crumbs and top with parsley. Bake 35 to 45 minutes or until chicken is done.

Note: Can also bake fresh green beans, asparagus, carrots and/or the small new potatoes down the sides if you use a 13x9x2" baking dish. One dish dinner and very little cleanup!
