Coconut Chicken

Coconut Chicken

I'm not the kind of cook who follows a recipe
very often...I'll tell you what I put in the
Coconut Chicken but feel free to adjust to
your personal taste...

I sauteed finely diced sweet red bell pepper
and one whole sweet onion in about 3/4 tbs
olive oil (evo) after the veggies had sweated
I put in some chopped garlic (we like a lot)
after that was all warm and the veggies were
tender but NOT carmelized I added the following:

1 20oz can chunk pineapple-drained & reserved liquid
1 8oz can cut baby corn
1 5oz can sliced water chestnuts
1 8oz can sliced bamboo shoots
2 13.5 fl oz cans of coconut milk-unsweetened
2 limes juiced

I let that heat to low boil, added salt and pepper
to taste...then I mixed about 2 tbs corn starch in
reserved pineapple juice and added to sauce pot
along with two packets of Splenda (probably
didn't make much difference) chicken breast
seasoned with garlic and sweet basil and over
Jasmine rice...I think it could have served 4
adults or 2 adults and several children...we
have a family of 2 adults and 2 children and
had a little left over.

Even my meat and potatoes DH loved it!
