Stuffed Chicken Breast
In this recipe for Stuffed Chicken Breast, you can certainly leave the bacon part out. You can roll them in flour and lightly brown them before placing them in the oven at 350 for 40 minutes. You can also be creative and stuff them with low fat cheese and blanched asparagus. Just have fun with the floorplan. It's not written in stone! Let's do it!
Stuffed Chicken Breast
2 chicken breasts, evenly and carefully sliced open and spread, skinned,
boned and flattened with a mallet.
1/2 bunch fresh spinach
1/2 cup mayonaise
1/2 cup feta cheese, cumbled
4 slices lean bacon
Mix together spinach (cleaned and dried ) mayo and feta and place a spoonful on center of each chicken breast. Very carefully roll up the chicken so that nothing leaks out, then, starting at one end wrap with bacon strips. I usually use 2 per breast but it depends on size. When the bacon is wrapped tightly around the chicken you can use toothpicks to hold in place. Bake at 350F until bacon is crispy. Remove from oven and slice into medallions, it looks very nice on the plate this way. Serve with a spinach salad and potato croquettes.
