Harvest Pumpkin Brownies

Harvest Pumpkin Brownies



1 can (16 ounces) pumpkin
4 eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
2 cups sugar
1 tablespoon pumpkin pie spice
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
6 tablespoons butter or margarine, softened
1 package (3 ounces) cream cheese, softened
1 teaspoon vanilla extract
1 teaspoon milk
1/8 teaspoon salt
1-1/2 to 2 cups confectioners' sugar

In a mixing bowl, beat pumpkin, eggs, oil and vanilla until well mixed. Combine dry ingredients; stir into pumpkin mixture and mix well. Pour into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees for 20-25 minutes or until brownies test done with a wooden pick. Cool. In a small mixing bowl, beat the butter, cream cheese, vanilla, milk and salt until smooth. Add confectioners sugar; mix well. Frost brownies. Store in the refrigerator. Yield: 5-6 dozen

Here's the recipe for Pumpkin Bars.


4 eggs
1 2/3 cup sugar
1 cup cooking oil
1 16 oz can of pumpkin
2 cups flour
2 tsps. baking powder
2 tsp cinnamon
1 tsp salt
1 tsp soda
1 stick (1/2 cup) oleo
1 3 oz pkg cream cheese
2 cups powdered sugar

Directions: Beat eggs, oil, sugar & pumpkin together. Mix flour, salt, baking powder, cinnamon & soda together & add to pumpkin mixture. Spread in UNGREASED baking sheet. Bake at 350 til done.

FROSTING:

Beat oleo & cream cheese til light & fluffy. Add powdered sugar & mix well. Spread on cooled bars.
If making into a roll, I only use half of the cake mix in the pan to make it easier to roll. Roll up jelly role style & let cool. Unroll & spread frosting on & re roll it. Sprinkle with powdered sugar.

FROSTING

1 block cream cheese softened
3/4 C. butter or margerine

Mix all together and frost pumpkin bars.

Pumpkin Shortbread Bars

Crust:

1 package yellow cake mix
1 egg
1/2 cup butter melted

Combine all 3 ingredients and press along the
bottom of a 13 x 9-inch baking pan.

Topping:

1 8-oz. package cream cheese
1 15-oz. can pumpkin
2 eggs
1 1/2 tsp. vanilla
1/2 cup butter
1 16-oz. package confectioner's sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/3 cup crushed pecans

Beat cream cheese and pumpkin together until
smooth. Add eggs, vanilla and butter and continue
beating. Add sugar and spices and mix well.
Spread mixture over cake batter crust and sprinkle
with pecans. Bake at 350 degrees for 45 minutes.
Allow bars to cool and then place in the refrigerator
until set (middle will not be set when taken out of
the oven). Cut into bars and serve with whipped
topping if desired.

The Skinny: Use light cream cheese and your favorite
egg and sugar substitutes.

Pumpkin Snack Bars
(frosting recipe follows)

1 pkg. (2 layer)spice cake mix
1 can (16 oz) pumpkin
3/4 c. Miracle Whip or Miracle Whip Light
3 eggs

Blend cake mix, pumpkin, dressing, and
eggs with electric mixer on medium
speed until well blended. Pour into a
greased 15x10 baking pan.

Bake at 350 for 18 to 20 minutes or
until toothpick inserted in center comes
out clean. Cool completely on a wire
rack.

Frosting:

3 1/2 c. powdered sugar
1/2 c. (1 stick) butter, softened
1 tablespoons milk
1 tsp. vanilla


Blend all ingredients with electric mixer
on low speed until moistened. Beat on
high speed until light and fluffy. Spread
over cake.

Makes approx. 3 dozen bars

Pumpkin Spice Bars

1 box of Spice cake mix
1 (15-ounce.) can of Libby's 100%pure pumpkin
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon Pumpkin Pie spice

Spray a 9 x 13-inch baking dish with Canola spray.
Using a hand mixer mix all the ingredients until all
lumps are removed. Batter will be very thick. Pour
into baking dish and spread evenly. Bake according
to directions on cake mix package. Servings 12.

WWPoints: 1 per serving.
