Cool Rhubarb Oat Bars...

RHUBARB OAT BARS...

1 1/2 cups chopped rhubarb
1 cup brown sugar,divided
4 TBSP. water, divided
1 tsp. lemon juice
4 tsp. cornstarch
1 cup old fashioned oats
3/4 cup all purpose flour
1/2 cup flaked coconut
1/2 tsp. salt
1/3 cup butter, melted

In saucepan combine rhubarb, 1/2 cup brown sugar, 3 TBSP. water, and lemon juice. Bring to boil and reduce to medium, stirring for 5 minutes. Combine cornstarch and remaining watet until smooth. Gradually stir into rhubarb mixture. Bring to boil and cook 2 more minutes. Remove from heat and set aside. In bowl combine oats, flour, coconut, salt, and remaining brown sugar. Stir in butter until crumbly. Press 1/2 of mixture into greased 8 inch baking dish. SSpread rhubarb mixture and then sprinkle the remaining oat mixture. Press down firmly. Bake @ 350 for 25-30 minutes. Cool and cut into squares.
