Finger Food Dumplings (Vareneky)

DOUGH

2 cups flour
1/4 tsp salt
1egg
1 cup milk
1 tsp oil

FILLING

1/2 pound sharp cheese, shredded
2 cups mashed potatoes
1/4 cup onion, sauteed

Heat 3 qts water and 1 tbsp salt and let simmer. Mix the dough ingredients till it makes a sticky dough. Roll out to 1/4" thick and cut circles using a floured doughnut cutter.

Combine filling ingredients and fill the circle centers with 1 to 2 tbsp filling. Wet the edges of the dough and fold in half. Pinch edges together making sure dough is completely sealed around edges. Drop into simmering water and cook 10 minutes. Remove and drain. Fry in butter till golden. Serve with sour cream and melted butter for dipping. Makes 6 to 8 servings
