Of all of the cheeses that I've eaten, I've never tried Brie. Is it a mild cheese? What's it compared to?

It is a lot like Camembert cheese. It has a buttery flavor and is a soft cheese. One thing though, it only keeps about two weeks and if it develops mold on it it needs to be thrown away. It is "ripened" from the outside in. There are many varities of it that differ quite a bit from one another.
