Thumbs up Stuffed Cuke Rounds


1 large cucumber
3 oz. cream cheese, soft
1 TBSP. crumbled blue cheese
2 tsp. minced parsley fresh
1 tsp. minced dill fresh
1 tsp. grated onion
20-26 pimento strips
dill sprigs

Run the tines of a fork lengthwise down the cucumber. Cut a 1 inch slice from each end. Cut cucumber in half lengthwise, remove and discard seeds. Place cucumber cut side down on paper towel 10 minutes. Combine other ingredients and spoon into cucumber halves. Put halves back together and wrap in plastic. Refrigerate 4 hours. Remove and cut cucumbers into 1/2 inch slices and garnish with slice pimento and dill sprigs.

The recipe didn't say to peel cucumbers and since I used my own (so no wax) I left the peel on. I still ran the times of the fork down the sides and I liked the look after they were cut!These were simple to fix and made a nice addition to a hot summer night supper of sanwiches and chips! Thanks for sharing!
