Armadillo Eggs

Armadillo Eggs

Approximately 1 pound of jalapenos or a little more
2 pounds bacon
2 packages cream cheese, softened

Split each jalapeno in half, lengthwise. Use a spoon to scrape the seeds and veins out, unless you can handle your armadillo eggs very spicy. Fill each jalapeno with cream cheese and close it with the other half. Then, wrap a slice of bacon around each jalapeno. If the jalapeno is rather large, you can use 2 slices. If desired, you can hold it together with a toothpick. However, I just cook them as they are. Place the armadillo eggs on a cookie sheet that has lips around it as there will be quite a bit of grease. Back ina 375 degree, or a little hotter, oven until they are sizzling and thouroughly cooked.
