Elizabeth's Holiday Appetizer

Holiday Appetizer

1 brick cold cream cheese
1 cup pepper jelly
1 pack plain gelatin

Make gelatin according to directions on box.

Heat pepper jelly until it melts. (I use a microwave on low for 2 minutes at a time, stirring and repeating until melted.)
Add about 1/4 of the gelatin to the melted jelly.
Allow gelatin/jelly mixture to cool until it begins to re-jel.

Put the brick of cold cream cheese on the dish you will use to serve it. Slowly pour 1/2 of the mixture over the brick of chilled cream cheese, allowing the mixture to spread over the plate around the cheese. Place the dish in refrig for about 20 min, then slowly pour the other 1/2 of the mixture over the cheese again. This forms a wonderful coating. Serve with lots of Ritz crackers and stand back!

I usually make two of these, one with green (less hot) and one with red (hotter) pepper jelly. If you don't make your own, you usually can find pepper jelly in the grocery.
