Souse/Hogs Head Cheese...
My Aunt is a TRUE SOUTHERNER and still likes 2 make this 4 gatherings. She subscribes 2 a few of the soul food sites and she also shares some of her "own" recipes so here u go and enjoy... :blooming:

1/2 fresh hog jaw
3 to 4 pound pork roast,Boston butt
6 pigs feet
1 onion, chopped
1 stalk,celery
2 bay leaves
2 pods garlic
Thyme,salt,pepper and red pepper to taste

1 onion, chopped
4 green onion chopped
2 stalks celery,chopped
2 to 3 pods garlic
1 Tablespoon lemon juice
Red pepper to taste....I use crushed red pepper
Black pepper
1 package gelatin, dissolved in 1/4 cup cold water

Boil first seven ingredients with the four seasonings, Let cook
until meat falls off the bones.
Debone and cut off fat and discard. Use skin,meat and all pigs
feet meat and skin.
Strain cooled liquid and let grease rise to top.Skim grease.
Put meat back into liquid with seasonings for second cooking.
Let cook down until not much liquid is left.
