Salsa with a Kick!

We make a wonderful fresh salsa. I'd love to share it with all of you.

Kicker Salsa

4 lbs of Roma Tomatoes
1 sweet onion
1 or more (more) jalapeño peppers
1 green pepper
1 Bunch of Cilantro
4 Cloves of fresh garlic
Salt, pepper and sweetener to taste. (we use 1 package of sweetnlow)

Chop each item finely and combine. Add salt, pepper, and sweetener to taste.

Enjoy!

Now that that we have way too much delicious salsa to eat... another recipe to use it up!

Veggi Chili

2 Cans of Beans - pinto, black, navy, other?
2 Cans of Tomato Sauce - S & W flavored Brands, I use the Mexican Style
1 Can of Corn
1 large onion chopped
1 tsp. Chili powder
1 Cup of Salsa

Everything goes into a large pot. Heat and eat!

Meat -

2Tbsp. of oil in the bottom of a large pan. Brown Hamburger, Beef, Pork, or Chicken pieces, Turkey, or Sausage in the bottom of the pan until throughly done. Add the chopped onion and cook until the onion is translucent. Then add the remaining ingredients.

Serve with Corney Cheese Muffins and a big Salad.
