I tested Bilby's Spaghetti Frittatta for lunch. It was very tasty, although the next time I make it I'll use less parmesan cheese. I used the pre-grated kind and it was a little too much parmesan for me, but altogether a very nice dish for lunch and it went together very well. (And it also gave me a great way to try out my new pan for fritattas and Dutch oven pancakes).
I can really see lots of options for using leftovers, as Kathy suggested.
