Whole Grain Baking Mix

This is a Master Mix I have used for years, really nice one to have around

Master Mix

2 cups all purpose flour
2 cups whole wheat flour
3/4 cup nonfat dry milk powder
1/2 cup quick cooking rolled oats
1/2 cup cornmeal
3 tbsp baking powder
1 cup shortening

In a large container mix flours, milk powder, oats, cornmeal, baking powder and 1 tsp salt. Using a pastry blender cut in the shortening till evenly mixed. Store this tightly covered up to 2 weeks at room temperature or several months in the refrigerator. Makes about 8 cups

Whole Grain Cherry Cobbler

4 cups fresh OR frozen unsweetened pitted tart red cherries
1/2 cup sugar
1 tbsp quick cooking tapicoa
1 tbsp margarine or butter
3/4 cup whole grain baking mix
1 beaten egg

For filling thaw cherries if frozen. In a large pan combine cherries, sugar, and tapioca. Let stand 15 minutes and stir occasionally. Cook and stir till bubbly. Stir in margarine. Keep warm.
For topper, put whole grain baking mix in a bowl. Combine egg and 2 tbsp water and stir into mix just till moistened. Turn hot filling into a 1 1/2 quart casserole. Immediately spoon on topper in 6 mounds. Bake at 400 degrees for 18 to 20 minutes or till a toothpick inserted tests clean. Best served warm. 6 servings

Whole Grain Biscuits
3 cups whole grain baking mix
1 cup water

In a bowl combine baking mix and water just till moistened. Drop by spoonfuls onto a greaed baking sheet. Bake at 425 degrees for 10 to 12 minutes or till golden. Makes 16 biscuits.

Whole Grain Pizza

1 pkg active dry yeast
2 1/4 cups whole grain baking mix
cornmeal
1 - 8 oz ctn pizza sauce
2 cups desired pizza toppings
1 1/2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese

For crust, soften yeast in 1/2 cup warm water. Stir in baking mix. Turn out onto lightly floured surface and knead 25 times. Cover and let rest 10 minutes.
Grease a 14" pizza pan or a 15 x10 x 1" pan and lightly sprinkle with cornmeal. Pat crust onto bottom of pan and build up edges. Bake at 425 degrees for 10 minutes. Spread sauce over crust. Sprinkle with desired toppings and top with mozzarella cheese. Bake at 425 degrees 10 minutes more or till cheese is melted and pizza is heated through. Sprinkle with parmesan cheese. Cut into wedges. Serves 6
