I made these this week and they were excellent:


4 1/2 cups flour
1 cup brown sugar
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
3/4 cup vegetable oil
1 1/2 teaspoons vanilla
3 eggs
3/4 cup mini chocolate chips or any fruit of choice

Preheat oven to 375. Grease the bottom of two muffin pans (or use muffin liners). Mix ingredients together. Fill muffin pan 2/3 full. Sprinkle on tops of muffins: 3 tablespoons sugar and 2 tablespoons brown sugar. Bake at 375 for 15-20 minutes. Yield: 24 muffins. Can store in refrigerator for 5 days.

You can also halve this recipe; use 1 whole egg and 1 egg white.
