I called and asked a friend of mine who does some part time work with a caterer. She said the baker they have frequently worked with will most often use a fondant (rolled gum sugar type) "frosting" on a cheesecake layer as traditional frostings (ie butter creams etc.) won't stick to the cheesecake.
