Hi sugar_n_spice,
My recipe is almost the same as Leigh's. The only difference in the batter is I use pumpkin pie spice in place of all the spices. I use 1 1/2 tsp. pumpkin pie spice & 3/4 tsp. cinnamon. I also add a dash of vanilla.
The recipes that call for 2/3 cup of pumpkin will allow you to make 5 batches of batter out of one large can of pumpkin. I don't mix the cakes up all at one time,I just mix one right after I put one in the oven,until I have all 5 done. Then I mix : 5cups powdered sugar, 5-8oz.pkg. cream cheese,
2tsp. vanilla & 2 sticks softened margarine together and then I unroll all the rolls and divide the filling between them.
