Spaghetti Squash Lasagna

as posted in WFD 01/06 by DeBora43:

2 spaghetti squash
1 chopped onion
2-3 cloves of garlic (I use roasted garlic that I roast in olive oil)
2 cans stewed tomatoes
1 can tomato sauce
2 tablespoons of Italian seasoning
salt and pepper to taste
1 (15 oz) can sliced black olives
2 cups shredded mozzerella cheese
1 pound hamburger meat

Cook the spaghetti squash in a 350 degree oven for 45 minutes to an hour until done. Let cool. Brown the meat and onion. Then drain. Add the tomato sauce, tomatoes, garlic, and seasoning. Cook over low heat for 15-20 minutes. Scrape out the meat of the squash and shred it completely. In a 9 x 13 inch pan that has been sprayed with cooking oil, layer half the squash, then the meat sauce, then half of the cheeses. Repeat the process. Top with the olives. Bake in the oven until hot and bubbly.
