Turkey Ziti--2 grams fat per serving

Serves 8

2 cups chopped onion
1 1/2 lb. lean ground turkey
1 (8oz) can tomato sauce
1/4 cup chopped fresh parsley
1/2 tsp dried oregano
1/2 tsp pepper
1 lb. ziti pasta, prepared according to pkg. directions (10 cups)
SAUCE
1 (8oz) can tomato sauce
1/4 tsp odried oregano
1/4 tsp dried basil
1 cup fat free Parmesan cheese
Preheat oven to 350 degrees and lightly spray a deep 3 qt casserole with nonstick cooking spray. In a large nonstick skillet saute onions adding about 2 tbsp water if needed for 5-6 minutes. Add turkey, break up lumps and cook till lightly brown. Transfer to colander and rinse with hot water to remove any excess fat. (this is an important part any time you cook turkey or even lean beef). Wipe out skillet with a paper towel to remove any fat left there(you will be surprised at what you see on the paper towel). Return turkey to skillet and add 1/4 cup water, can of tomato sauce, and parsley, oregano, and pepper. Simmer over medium heat 2-3 minutes or till liquid is almost gone. Remove from heat. Spread 1/2 cooked, drained ziti in prepared pan and spread meat mixture over the pasta and top with remaining ziti.
In a small bowl, mix remaining can of tomato sauce with spices and half the Parmesan cheese and pour over casserole; top with remaining Parmesan and bake uncovered for 1 hour or till lightly browned. Let stand 15 minutes before serving
