I have purchased wheat that was canned in gallon cans--you have to help can it--from the LDS Cannery. They have them scattered around the country. The labels say that you can store it this was for 20 years. Mine is 5 years old and still good. They quit letting non-members participate for a while before Y2K. Contact the local Church of Jesus Christ of Latter-Day Saints and see if you can go with them to the cannery. They have lots of other things available to can too. Each can had an Oxygen absorber packet it in.
Also, the whole wheat needs to ground and used the same day. Everything I read says that the ground whole wheat loses 90% of the vitamins within the first 24 hours--even if you keep it in the fridge.
