Made Hearty Corn Chowder last night for supper; a very filling meal all by itself!

1/2 pound sliced bacon, diced
1 cup celery, chopped
1/2 cup onion, chopped
2 cups peeled potatoes, diced
1 cup water
2 cups frozen corn or 1-15 oz cans whole kernel corn, drained
1 - 15 oz can cream style corn
1 - 12 oz can evaporated milk
6 oz smoked or polish sausage cut into 1/4" slices
1 tsp dill weed
In a large pan, cook the bacon till crisp; remove to paper towels and set aside. Drain all but 2 tbsp bacon grease and saute the celery and onion in it till onion is just starting to brown. Add potatoes and water; cover and cook over medium heat about 10 minutes or till potatoes are just tender. Stir in remaining ingredients and cook till all heated and to be sure potatoes are cooked tender; about 30 more minutes. Serves 4. This recipe doubles nice!
