Low Carb Cauliflower Cheese Soup

1 large head cauliflower chopped into equal florets
1 onion, chopped
5 cloves garlic, minced
4 cups water with a chicken base (I use Tones)
3 bay leaves
1 tsp dried thyme
pinch cayenne pepper
1/2 tsp paprika
pinch sea salt
1 tsp black pepper
1/2 cup milk heated with 1/3 cup butter OR use 1/2 cup heavy cream
8 oz cheddar cheese, shredded
1 tbsp brown mustard

In a large dutch oven heat 2 tbsp olive oil and cook onion till tender. Add garlic and cook another minutes or so. Add cauliflower and stir. Add water and chicken base, herbs and spices. Cover and bring to a boil. Cook till cauliflower is soft, a bout 10 minutes. When cauliflower is soft enough add the "cream" and cheese. Stir as the cheese melts and add mustard. Remove bay leaves. Good garnished with bacon bits and /or chives. About 8 servings
