Easy Cast Iron Skillet Biscuits

I got this recipe from recipelion

2 cups all purpose flour
1 1/2 tbsp sugar (I used splenda)
3 tsp baking powder
1/2 tsp salt
1/8 tsp baking soda
2 tbsp soft butter
2 tbsp shortening (I used 2 tbsp butter)
1 1/4 cup buttermilk ( I used skim milk and added 1 tbsp vinegar)
2 tbsp melted butter
1 cup all purpose flour (I used 1/2 cup)

Preheat oven to 475 degrees. In a bowl, mix together flour, sugar, baking powder, salt, and baking soda with a whisk. With your fingers cut in the butter and shortening to about the size of peas. Add the buttermilk to mixture and stir till combined. Allow this to set 3 minutes. In a separate bowl, put the additional 1 cup flour. Using a 1/4 cup measuring cup coated with flour drop 1 scoop of biscuit mix into flour. Toss gently the biscuit in the flour and scoop the biscuit up from the bottom and with your fingers. Lightly shake off excess flour. Put the biscuit into a greased 10" cast iron skillet. Continue with the rest of the biscuit dough until you have 10 biscuits. Pour the additional 2 tbsp of butter over the biscuits and bake 16 to 18 minutes or till just browned.

These were very easy to make with no rolling and cutting out, but were like having those type of biscuits and tasted very good too!
