2 Varieties of Vrsherren's Rice with General Tso Chicken

Had a pkg of frozen General Tso chicken (with sauce pkg) cooked on my crisper pan (chicken only)
Rough cut up a red and greed bell pepper 1 onion and about 2/3 cup of celery. Saute till colors brighten, but still crisp.
Drain 1 can of pineapple chunks (or tidbit) set aside.
Made 2 cups rice and divided it. 1/2 the rice I added 1/2 the veggies and soy sauce and finely grated fresh ginger. Stir to evenly distribute everything (rice should be hot). I usually sneak in just a little cayenne or red pepper. It's just enough to wonder but not burn. Dish 1 done
Dish 2: mix remaining veggies and pineaple chunks (tidbits) with hot cooked chicken bits and add sauce. Fold over till well coated. Serve over plain white rice.
