We are having homemade beef vegetable soup today. I love using my crockpot on the weekends. Everyone is in and out with there own schedule that they can eat when they want or need to.

WE are going to have veggie soup for dinner tonight from the other night. Ended up not taking a pot to Grandma's yesterday as they took the kids to Chuckie Cheeses.

I made this the other night and it was really good from Family Circle magazine.

Creamy bow-ties with Broccolini and ham
12 oz bow-tie pasta
1 bunch broccolini (12 oz) or broccoli
2 T butter
1 med onion, chopped
1 c half & half (I just used milk)
1/4 t salt & pepper
8 oz cooked ham, cut into strips
Grated Parmesan

Bring a pot of salted water to a boil. Add pasta and cook according to package, adding broccolini to water the last 3 min. of cooking. Reserve about 1 cup of cooking water before draining.

Heat butter in medium skillet over med-high heat until melted. Add onion, saute 4 min or until soft. Add half & half, salt and pepper simmer, uncovered 3 min or until thickened.

Add ham, cover and cook unitl heated though, about 2 minutes.

Toss pasta and broccolini with sauce. Add a little pasta water to think, if desired. Serve with grated Parmesan.

Going to use the $30 Pizza Hut gift cards that I earned at MyPoints combined with coupon for a night out with the family. Will get a large super supreme pizza with 10 boneless wings and drinks for 4 plus tip for a no cost dinner out.

And have enough leftover for lunch when added some raw veggies on the side.
