Dinner tonight is ham steaks, Old fashioned green beans and mashed potatoes.
Here is the recipe for the casserole I made Sunday night. I am sure there are similar recipes posted. DS and his friend wiped this out. I should have doubled it.
Fiesta Bake
1 lb. gr beef (I used gr chicken)
1 cup chopped onion
3/4 cup salsa
1 package Taco Seasoning Mix
1/4 cup water
1 cup corn (I used canned mexicorn with blackbeans)
1/2 cup olives (didn't use)
1 package corn muffin mix
4 oz. shredded cheddar (I used Mexican cheese blend)
1/2 cup green chilies (I didn't use)
Cook beef and onion until browned. Stir in salsa, seasoning mix and water. Cook over low heat for 5 minutes. Stir in corn and olives. Spoon into 8 inch baking dish. Prepare batter for corn bread according to package. Stir in cheese and chilies. Spread over meat mixture. Bake 30-35 until golden brown.
350 degree oven.

last night I made roasted veggies, sauted shrimp and tabouleh. Bought some hummus to go with it.
DH had tomato sandwiches and cucumbers in sugar/vinegar mix. Our own tomatoes and cucumbers.
Our neighbor came over with some fresh green beans and cherry tomatoes so have those to eat up.
Tonight will be a Hobo Dinner with a spinach salad topped with marinated mushrooms & tomatoes. Only change to the Hobo din-din will be that I am quartering up new potatoes in it instead of using sliced russet potatoes.

i will post the recipe for the pasta dish I am making once I find it again (I have it sort of memorized but should really check the recipe before posting)
