I have no idea what is for dinner tonight and tomorrow will need to be something in the crockpot or that can be left on the stove for the second wave of people eating.
Going to make a tuna casserole tonight and have a salad from whatever is ready in the garden. I hope I have some yellow squash ready to slice up in it. Here is the recipe for the tuna casserole:
Easy Tuna Dish
12 oz tuna, drained and flaked
1/2 cup celery, chopped
1/3 cup green onions, sliced (include the green tops)
1 large head cauliflower
2/3 cup fat free sour cream
1/2 cup fat free mayonnasie
2 tsp yelow mustard
1/2 tsp dried thyme
2 small zucchini, scrubbed and sliced
2 cups low fat cheddar cheese
1 small tomato, chopped
Preheat oven to 350 degrees. In a large bowl combine tuna, celery, and green onion. Use only the tops of the cauliflower and slice it;steam till tender but not mushy. Add it to the tuna mixture. In a small bowl combine the sour cream, mayonnasie, mustard, thyme and blend into the tuna mixture. Spoon half into a buttered 2 quart casserole. Top with half the zucchini and repeat the layers. Top with cheese. Bake 30 to 40 minutes or till hot and bubbly. Sprinkle with the chopped tomato and serve. Makes 4 to 6 servings
