Lisa, if you're a horrid mum so am I, as my kids had battered sausage and chips last night!

Tonight we were supposed to be having Saucy Chicken with rice and veg but I left it too late to cook it, so instead we're probably going to have Spiralli Pasta with ham, lemon and peas!

Charlotte and Sarah Jean, they liked the Burger King, Chicken Fingers seem to be their item of choice. I don't oversize anything, they get only what I know they will eat and that's it! Saucy chicken sounds good!

The kids are eating at Grandma's, I'm eating at the Avon PC Tribute dinner and dh is on his own can have leftovers or pick something up.

I am making sausage sandwiches for lunch not sure what the sides will be yet.

Breaded Chicken Cutlets

Tonight I made chicken cutlets, escarole, stringbeans & corn on the cob. Had watermellon for dessert.
The cutlets were so good. I cut the chicken cutlets in half so they are thinner. Coat them with bread crumbs first than dip in egg then bread crumbs again. They come crisp on the outside tender in the inside. Cook in a fry pan turning a few times so they don't dry out. Cover at the end to make sure they are completely cooked inside.
