It's raining here but DH says he wants to grill. We may have some wet dinner, LOL!

I'm marinating chicken breasts for Luau Chicken. This comes out so tender and juicy.

On the side we're having tater tots and some kind of vegetable.

I'm going to make a pot of ham & bean soup since the girls have ballet and will need to eat at 5 and the guys have lodge and will eat at 6. I have corn bread in the freezer plus they can have tossed salad or macaroni salad if they want.

this is our dinner tonight.


Creamy Chicken & Pasta Bake
Total Time:
38 min
Makes:
4 servings, 1-1/2 cups each

What You Need!
1-1/2 cups multigrain rotini pasta, uncooked
1 small bunch broccoli, cut into florets (about 3 cups)
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 cup fat-free reduced-sodium chicken broth
2 oz. (1/4 of 8-oz. pkg.) 1/3 Less Fat Cream Cheese, cubed
1 cup 2% Milk Shredded Mozzarella Cheese, divided
2 Tbsp. Grated Parmesan Cheese

HEAT oven to 375şF. Cook pasta in large saucepan as directed on package, adding broccoli for the last 3 min.
MEANWHILE, heat large nonstick skillet on medium-high heat. Add chicken; cook 3 min. or until no longer pink, stirring frequently. Stir in broth; simmer 3 min. or until chicken is done. Add cream cheese; cook and stir on low heat 1 min. or until cream cheese is melted. Stir in 1/2 cup mozzarella.
DRAIN pasta and broccoli. Add to chicken mixture; mix lightly. Spoon into 8-inch sq. baking dish; cover.
BAKE 15 min. or until heated through. Sprinkle with remaining cheeses. Bake, uncovered, 3 min. or until melted. Let stand 5 min.

We have chicken and veggies left from Saturday night that need to be used so I am doing chicken-on-a-stick again. Yum.

SUNDAY: Grilled salmon, baked potatoes, salad
MONDAY: Grilled brats, cottage cheese and chips
TUESDAY: Tacos (Happy Cinco de Mayo!)
WEDNESDAY: Venison loin, mashed potatoes and green beans

I forgot that tomorrow is Cinco de Mayo. I guess we're celebrating Quatro de Mayo at our house - lol! We're having chicken fajitas tonight with rice and fruit salad.
