Tonight my wonderful dh is grilling out chicken! I sliced up green pepper, onion, red potatoes and yellow squash, and its also cooking on the grill in my grill basket Barbequed chicken and roasted veggies! MMMmm!
Made meatloaf with onions peppers and potato all in the same corning ware dish in the microwave. In twenty minutes was all done. Also made broccoli. Had watermelon for dessert.

I prefer fresh prawns to frozen but am putting the recipe aside for my summer and prawn season.
As summer is coming up for others thought I put the recipe here.
Basil-Lemon Shrimp Linguine
1 pound fresh or frozen large shrimp in shells
6 ounces dried linguini or fettuccine
1/2 teaspoon salt
8 ounces fresh asparagus spears, trimmed and cut diagonally into 1-inch pieces
Nonstick cooking spray
2 cloves garlic, minced
1 cup thin red, yellow, and/or green sweet pepper strips
1/4 cup snipped fresh basil or 1 tablespoon dried basil, crushed
1 teaspoon finely shredded lemon peel
1/4 teaspoon ground black pepper
1/4 cup sliced green onions
2 tablespoons lemon juice
1 tablespoon olive oil
Fresh basil sprigs (optional)
Lemon wedges (optional)
1. Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact if desired.
2. Cook pasta according to package directions in water with 1/4 teaspoon of the salt, adding asparagus the last 3 minutes of cooking; drain and return to pan. Cover and keep warm.
3. Meanwhile, lightly coat a large nonstick skillet with nonstick cooking spray. Heat over medium heat; add garlic; cook and stir 15 seconds. Add pepper strips; cook and stir 2 minutes or until crisp-tender. Add shrimp, dried basil, if using, lemon peel, remaining 1/4 teaspoon salt, and ground black pepper. Cook and stir for 3 minutes or until shrimp turn opaque. Remove from heat.
4. Add shrimp mixture to pasta mixture. Add snipped fresh basil, if using, the green onions, lemon juice, and oil; toss gently to coat. Transfer to serving plates. If desired, garnish each serving with basil sprigs and/or lemon wedges.
The GKs came over for a slumber party and to go swimming. So, we had a picnic. We have burgers, hot dogs, buttered corn, broccoli and cheese, and lettuce and tomato.
Tonight we're having grilled chicken and baked potatoes (on the grill). We'll also have a tossed green salad. Dessert will be either banana choc. chip bread or ice cream (or maybe both!) It's too hot to cook inside today.
Well I couldn't find a nice flank steak today. I bought 3 thinner steaks that were all packaged together and they were good. DH grilled them to perfection. DS had several friends over. They were having band pracatice. I added another side. We were originally having steak, spanish rice (Zatarains) green beans and garlic toast. Well I added mac and cheese. I know it doesn't go, but these boys were happy and full.

Your choice of meatballs, I've made beef, 3 mid sized ones per person.
1 Jar of spaghetti sauce
Brown each meatball in a large pot.
Take out the meat balls and brown 1/2 a sliced onion.
Put the meatballs back in and pour the spaghetti sauce over the top, simmering until meatballs are tender.
5 mins before serving add cooked pasta (I used penne) gently stirring.
Serve and top with grated cheese.
Add garlic or herb bread.
This time, the theme is going to be autumn/Halloween so your stories need to use smilies to express as many words as possible and your story should be focused on anything that has to do with autumn or Halloween.
