Home made gumbo

Made a ground beef mixture with peppers onions, zucchini, tomatoes red beans and nappa cabbage. Made a pot of elbow macaroni to mix with it. There is enough there for another meal. Always tastes better the next day.
Getting ready to eat in a few minutes be back later.

Friday night was Talapia with jasmine rice and succatash.

Saturday night was ham slice on the grill, flavored noodles and redbeets.

Tonight was good! We had Pineapple chicken done in the pressure cooker (how did I ever live without one?) with stir fry veggies and rice. Gramma's chocolate chip banana loaf for dessert.

I made home made pizza using frozen bread dough. I just added pasta sauce and fresh vegies along with Mozz cheese. Yum!

Sunday nights dinner will be whole chicken


Bacon Squash Saute


SERVINGS: 4
TIME: Prep/Total Time: 20 min.
  • <LI class=ingredient>6 bacon strips, diced <LI class=ingredient>2 small zucchini, cut into 1/4-inch slices <LI class=ingredient>2 small yellow summer squash, cut into 1/4-inch slices
  • 1 medium onion, thinly sliced
In a large skillet, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 2 tablespoons drippings.
In the drippings, saute the zucchini, yellow squash and onion for 6-8 minutes or until crisp-tender. Sprinkle with bacon.

Had chicken strips and baked steak fries and green beans last night. Today am doing my fave green chili cheeseburgers. I think I will use Muenster cheese rather than Provolone. Also, some grillin' beans to go with.

Barbzy, thank you for your recipe for marinara sauce!

Tonight will be DH favorite - Meatloaf, mac n cheese and greenbeans. I got 3lbs of ground beef, two will go for the meatloaf and one pound will go for taco meat for Monday's supper.
