Tonights dinner was SO yummy I'd like to share the recipe with you!
This is from Gooseberry Patch' Cozy Home Cookbook.
SPRING POTLUCK SALAD
spring mix lettuce
sliced strawberries
feta cheese ( or blue cheese if preferred)
chopped walnuts
mandarin oranges
red onion slices
bacon, cooked crisp
raspberry vinaigrette
homemade croutons
Amounts depend on how many you are serving..........I made three plates.
Arrange salad greens on plate.
Top with strawberry slices, small handfull of feta cheese, a tablespoon or two chopped walnuts,
a couple spoonfuls drained mandarin oranges, a couple red onion slices and one or two strips bacon torn into bitesize pieces and homemade croutons. Serve with raspberry vinaigrette. (I served the spray type dressing)
Croutons:
Melt two T of butter and 2 t olive oil in saucepan. Add two chopped garlic cloves.
Melt over low heat.
Tear the crusts off four slices white bread. Cut into small cubes. Add bread to saucepan and let them become golden brown. Remove with tongs and drain on paper towels.
I'm thinking about green chile burgers. Grill burgers on one side, flip, then top with a whole canned green chile opened flat. When the burger is almost done, top with a slice or two of your favorite cheese. We like Provolone. Serve up on a toasted bun with whatever you like on your burger, or with nothing to savor the flavor.

Coming in a bit late but we splashed out and had good old 'fish 'n chips'! Didn't fancy cooking tonight.....
Tomorrow (Sunday) will be chicken fajitas & salad as its a really busy day and these are quick to do. Planning to do my weeks baking (cakes and cookies) so desert will be a choice from that.
