Barb, how old is Luke? My DS used to, well, he still does, out eat the same amount that 3 people eat! When people meet me as Adam's mom, they asked how in the world we ever afforded to feed him. Some boys just have high metabolisms. lol

Here are a few ideas if you are looking for finger foods and some make ahead foods:
Sausage Balls, make ahead of time
Pinwheels, can be made ahead of time
The good ol Rotel and Velvetta cheese dip and chips
Armadillo Eggs (These take a bit of work, but well worth it!)
Sandwiches as those can be made ahead and nibbled on all day
Chalupa dip, can also be made ahead
Spinach Artichoke dip with toasted bread
Quesadillas, cut into wedges
Pizza and fried chicken are tasty cold and you can make or buy them ahead of time as well.

Enjoy your Superbowl. DH is here visiting and I only like the Rams, so I am glad we have 2 television sets here in the RV.

Clean out the fridge night. Small chef salad w/one roll and one end of artisan bread, 3 slices of pizza, and apple pie.

DeBora, Luke is almost 5. His dinner was 5 "silver dollar" pancakes, with 2 bacon slices and an egg. He skipped the egg, ate ALL the pancakes, ALL his bacon, some of his sister's bacon, and 4 mozzarella sticks! And those were some big honkin' silver dollar pancakes. When I was a kid, those were 2 inches across. These had to be 5 inches across EACH and he ate 5!

I'm doing something I almost NEVER do tonight. I'm making two main courses for dinner. A few weeks ago we had plans with friends (and their 2 small kids) for them to visit for dinner. They had a death in the family & had to travel so we rescheduled for today. During the week I found out that they are bringing Grandma & Grandpa today too.....well, I had the pork loin to make roast pork, already in the freezer, and while it's big enough for 9, it's not big enough for 2 additional grownups! So I got a roasting chicken on sale at the supermarket and will cook that as well. I'll just save the leftover meat for future casseroles.

On the side, mashed potatoes, green beans, braised Napa cabbage.

For dessert, I'm making a Lemonade Pie and our friends are bringing another dessert.

We ordered a pizza and a antipasta last night. Then went to the elementary school's bingo night.

Last night was dinner out with a friend. She took me to a place I had never been and we had a very nice fish dinner with salad bar and soft drink for $7 each.

Barb, he sounds like he eats like my DS ate. When my DS was 3 months old, his doctor put him on solid food and he was eating 3 jars of baby food in one sitting. He is 27 years old and I have to say that is no hope for Luke ever slowing down in his eating. In fact, he might even get worse. lol

Tonight, we are having cheeseburgers grilled outside since it is going to be warm today--or rather more like it is supposed to be for this season. We will also have the fixins with it such as blue cheese, lettuce, tomato, onion, and mayo. On the side, I will serve potato salad.

DD1 who is 10 has been ordering off the adult menu at resturants for the past year. She can eat more than I do if she is really hungry.

I made chili with corn bread for lunch so we will probably have it again for dinner.
