Rumor has it that it's Pizza Night around here. I'll enjoy the night off from kitchen duty

Big DS and DH were supposed to go on a Boy Scout camping trip, but it was canceled...so they'll be home this weekend after all!

I'm trying a new recipe today.

One Pot Pork Chop Dinner
6 to 8 pork chops
6 potatoes
4 to 6 carrots
1 small onion
1 bag frozen green beans
Salt
Pepper

Fill bottom of crockpot with water--about a 1/3 full. Cut up potatoes and carrots and place in bottom. Salt and pepper. Cut up half onion. Place pork chops next. Cut up rest of onion. Pour bag of frozen green beans on top. Salt and pepper. Cook on low all day.

Tonight it is cajun chicken and shrimp with peppers and onions, pasta, apples and grapes, maybe a fresh loaf of bread made in my new bread machine.

Hello! a very long time since I checked in here. Am trying to get back into more organized meal planning, finding it more difficult with only DH & myself. Was easy with 5 DS' at home...but way more expensive!

Fish & Tartar Sauce (hm)
Succotash
Tossed Salad

Momperson, I know what you mean. I am temporarily cooking for just myself and I find it quite challenging. Even when I try to pare down my favorites, it seems like I have leftovers forever. So glad you decided to join in.

Approx 2 cups cooked flaked fish
2 cups cooked boiled rice
3 tabs butter
2 hard boiled eggs
Pepper, and garlic to taste. Parsley or corriander.
Method:
Mix flaked fish and boiled rice.
Add diced boiled egg and pepper, fold in gently.
Gently heat butter in frying pan and add garlic, then rice and fish mix.
Heat through.
Serve with chopped corriander or parsley to decorate.
Serves approx 4.

Dinner tonight is boneless skinless chicken thighs done up with apricot jelly and catalina salad dressing. Rice and green beans on the side
