Subbing...and still in shock that it's NOVEMBER already!! Before we know it the holidays will be here!! Yikes!!

For dinner we had Frittita and toast.
Dice and brown potato in bit of oil
Pour over top....eggs scrambed together ( I used 4 for 2 of us)
Add diced green pepper,
diced Roma tomato
sliced mushrooms
grated cheeze over top
Cover till cheeze melts

A simple supper on a busy night

and for those of you who asked what Chicken Marco polo is...
it is a chicken breast rolled around finely chopped broccoli, finely chopped ham and swiss cheese.
I buy it from Schwans, but I think I'm going to start making it myself.

Tonight is toasted cheese sandwiches and soup, there i only 2 of us
Tomorrow I'm making

Chicken Pineapple Kebobs.
8 Chicken thigh fillets cut into chunks.
1 fresh pinapple (tinned if need be)
1 bell pepper cut into chunks similar size to chicken.
1 tablespoon mint leaves
1 tablespoon honey
1 tablespoon oil
1 tablespoon lemon juice

Can use metal or wooden kebob sticks ( soak wooden ones in water first)
.After cutting chicken and bell peppers into chunks, thread onto skewers, chicken, peppers pineapple 2 or 3 times.
.Blend or process remaining pineappple, mint leaves, honey, oil, and lemon juice until smooth
.Brush some of the pineapple mixture over kebabs.
.BBQ or pan fry until chicken is cooked through.
.Serve and remaining pineapple mixture as sauce.

The pineapple sauce mixture is nice brushed onto chicken breasts and pan fried.
Use remaining pineapple mix as sauce.

Yeah, I caught this thread at the very begining of the month!!

Now, if I only knew for sure what I am making for dinner! It will probably be tuna noodle casserole.

One of the schools were selling hoagies that we'll be having for dinner tonight. They are usually pretty good. Big enough for dinner tonight and lunch tomorrow!! Have a great Wednesday!!

Dinner tonight I think is going to be Long John Silvers since I will be gone from 3-6pm. Will use a coupon for a fish family meal.

Thursday I'm thinking sausage pattie sandwiches with homemade french fries and another veggie.

I made dinner last night, vegetable beef soup, from leftovers and was pleased with the result. Some shreds of beef and onions from the roast, half a bag of mixed veggies frozen, a can of beef broth and a can of water, some spaghetti sauce in the jar that had been opened. Took some hot dog rolls, split them and added garlic, parsley, butter and toasted them. Garlic for Halloween, was that subconscious?

Tonight is planned for tuna subs so I have a tuna can to use for making pierogies tomorrow for the church bazaar.
