I made the cutest little burgers last night! I cooked the burgers on the Forman grill then we cut little jackolantern faces out of the cheese! They were SO cute!!

I am making some pumpkin cookies this afternoon.
Dinner will be vegetable soup and crab salad.

We are having chicken quesidillas and rice tonight. They will probably finish up the Pumpkin Fluff tonight too.

It's a really hard day for me today. While I was talking to my Mom, she asked me when we were going to keep our promise to visit her--she said it in a joking way but it broke my heart to tell her that we just couldn't afford to make the trip right now. She wants to see my kids so badly. Every year away from her just gets harder and harder, especially around Thanksgiving and Christmas.

Looks like everyone likes chicken no matter how it is cooked.
Making a roasting chicken stuffed with apples. Put some potatoes, carrots & squash around it. Will probably make a salad on the side. My friend gave me a homemade apple pie put it in the oven to cook at the same time. I am glad Mom still likes to eat hate having to many leftovers.

Tami~~my heart goes out to you

Tonight is pork roast, cheesy potatoes and tossed green salad. I still have some homemade cookies leftover that I made for my dgd's party at preschool yesterday, so that will be dessert!

Tami, if you can't afford to take your family to your mom, maybe you could afford to bring her to your family?

Dinner was pork chops, au gratin potatoes and corn.

An old standby tonight--pinto beans and rice. Always good. Also have brownies I made last night, but we were too full to tackle them. I will probably sneak one with a glass of skim milk in a bit.

I also have started a new pot of chicken soup. I figure it will be good to have on hand as the weather cools. DH never seems to tire of it.

Lynne, congrats on your chef guy!!

Tami, that is so sad to hear! Could you both get web cams to "visit" with each other. I know it is not the same, but, might come close?

Tonight's dinner will be breakfast for dinner. It will be bacon, with either pancakes, or french toast. Not sure how much bread I have that is salvagable.(no funny colors)

Last night we ended up with Hot dogs w/sauerkraut, can of baked beans, and green beans.

Tonight will be Chicken Chili Blanco. I'm still tweaking the recipe to the way I cook and my family's tastes. Tonight I'm putting in some bone-in, skinless chicken thighs. It will simmer all afternoon, and then I'll debone the meat. I think it will be better with "shreds" of meat than "chunks" of chicken.

I'll make corn muffins to serve with this.

I just finished putting together a batch of chili in the crock pot. I also have bread ready to go in the bread machine with the timer set to be done right after I get home from work. Makes for a little more work before I go to work in the morning, but I appreciate it alot when I get home at night.
