Monday is Chili and Cornbread.
Tuesday is Election day beef vegetable soup sold as a fundraiser for the Baileyville Grange Building. It is a 100 year old plus building that is used for other community events, not just for a polling place for our area. My dd1 is now old enough to vote and she is looking forward to having a voice!

Make-Ahead Chicken Manicotti

1 box manicotti noodles, UNCOOKED
14 chicken tenders
1 cup Italian salad dressing
3 cups your favorite spaghetti sauce (I use my own homemade sauce)
1 cup mozzarella cheese

Ladle a little sauce into the bottom of a 9X13 pan. Coat chicken tenders in the salad dressing. (This will season them AND help out a little with the next step.) Slide chicken into the raw manicotti. Place in pan. Smother the noodles with the rest of the sauce. More is better--be generous with the sauce. Cover the pan and refrigerate OVERNIGHT. The noodles will soak up the moisture from the sauce, and will become soft as they cook.

Bake at 350, covered, for 45 minutes. Remove, top with the mozzarella, and return to oven, uncovered, for 15 more minutes.

Ellen, it's amazingly easy, and YES--you can do it lowfat. I used fat-free Italian dressing, and you can use whatever lowfat cheese you want or even just dust it with a little Parmesan instead of the mozzarella. 10 minutes to put it together....I love that it's already done!

Thanks Barb!!! I'll be making this towards the end of the week.

I'm so proud of myself, got my whisky kielbasa in the crockpot. Woo Hoo. And my kitchen is clean; what an accomplishment.

Tonight is Roast marinated in soya sauce,with whipped potato's and gravy from the roast,with creamed corn and for dessert Pumpkin Pie.Yep,hubby loves pumpkin pies done right from the pumpkin and with all the pumpkins I cleaned,cutup and cooked I have enough pumpkin to make him pies whenever he wants.

No I haven't made pumpkin cookies,I don't have a recipe for them,and yes hubby would love them.I will have to see if I can find a recipe for the cookies,thanks and have a great day.
