Tonight we are having my quick Chicken Cacciatore.
1 pair double chicken breast (2 singles)
Sliced onion
2 stickes sliced celery
4-6 sliced mushrooms
1/2 sliced capsicum (bell pepper?)
Garlic, salt and pepper to taste.
1 jar spaghetti sauce.
Chop chicken and saute in frypan, add onion and brown. Set aside.
To pan add sliced vegetables saute 5 mins, return chicken to pan and add spaghetti sauce.
Cover and simmer for 20 mins.
I serve with potatoes and broccoli but is good with pasta and rice to.
My menu ideas for this week are....
Tonight DH and I went out for hamburgers for a nice change of pace.
Monday- Slow roasted chicken, mashed potatoes and vegies
Tuesday-Gourmet Goulash using left over stuffed peppers, vegies in fridge and mushroom soup, topped with cheeze.
Wed- Chili and cornbread
BTW, I am going to add that Chicken cacciatore receipe to my "have to try" list. It looks great!
October is coming in beautifully...though this morning is a little chilly...just 38 degrees!
We are going to have hot roast beef sandwiches and French fries tonight. Debbie, congratulations on winning the chili cook off! I love chili this time of year when it starts getting cool.
Liz..do you have a bread machine? I use the recipe that came with mine to make pizza dough and we really like it. I can get you the recipe if you want.
Tonight for dinner we had homemade (sorta) pizza and green salad. I used the Pillsbury crust in the can and added sauce, cheese, pepperoni and onions. Tasted pretty good, but I'm going to have to find a good recipe for pizza crust as it has that "Pillsbury" taste to it. I hadn't made it that way in years, and now I remember why. Sigh!

Here is a quick and easy pizza dough I make; I've posted it here on FC somwhere a long time ago and got good replies from it from others; maybe you would like it too.
Instant Pizza Dough
2 1/2 cups all purpose flour
2 3/4 tsp baking powder
1 tsp salt
3/4 to 1 cup water
2 tbsp olive oil
Mix flour, baking powder and sdalt in a large bowl. Add 3/4 cup water and the oil. Stir with a fork or wooden sppon till blended and a soft dough forms. If dough is too stiff, add more water, a tbsp at a time. It should be soft but not sticky. Knead about 3 minutes on a lightly floured surface till smooth.

Thanks, catlover, I'll try your recipe, too. I assume that you just spread it out and and add toppings. What temperature do you use to bake the pizza?
The current plan for todays' dinner is French Onion Soup made by DH. He's decided that since I'm working and he's home, he will try to make dinner a few nights a week. He's helped with this recipe before, so he's going to give it a whirl. I'm delighted for the help.

Dinner here last night was grilled steak and baked potatoes with a tossed green salad.
So far, here's the plan for the week:
MONDAY: Grilled hamburgers, sliced tomatoes and potato chips.
TUESDAY: Homemade pizza
WEDNESDAY: Beef and bean enchiladas with Mexican rice
This time, the theme is going to be autumn/Halloween so your stories need to use smilies to express as many words as possible and your story should be focused on anything that has to do with autumn or Halloween.
