Hi..just subscribing....didn't know if Jan is officially closed so I'm reposting last nights dinner
Dinner: going over to my sister's so no cooking here =0)
Dinner: In a Minute Steaks
<that's what I had to tell DH as he kept asking are they done yet?>
1/4 c. honey
2 tbsp. soy sauce
1 c. hot water <microwave on beverage > 2 tbsp. butter,
2 c. Stove Top <used bagged cornbread stuffing>
1 red or green pepper, chopped <used 1/4 of each> 4 Thin steaks pounded for rolling <used bottom round steaks>
A few dashes of this & that <onion powder & flakes garlic pepper>
Mix honey and soy sauce; set aside. Combine hot water and butter in bowl, stir to partially melt butter. Stir in stuffingand pepper. Spoon one half cup stuffing on each steak. Roll steaks, secure with wood picks. Place steaks in baking dish. Spoon honey mixture over steaks. Bake for 20 minutes at 375 degrees
*I let mine cook for 30 mins because they were over-stuffed and we prefer very well done steaks

Cook4fun asked for my Cheese Enchilada recipe, so I'm glad to post it here:
CHEESE ENCHILADAS
8 to 10 flour tortillas (8 1/2" fajita style)
8 oz (or so) cojack cheese, shredded (this is a marbled combination of colby and monterey jack cheese)
1/4 white or yellow onion, minced
1 can (10 oz.?) red enchilada sauce, hot or mild
1/2 cup shredded cheddar cheese
2 green onions, thinly sliced
Sprinkle about 2 to 3 Tbsp. shredded cojack cheese down the center a flour tortilla, sprinkle with about 1/2 tsp. minced onion. Roll up and place seam side down in a 9x13 glass baking dish. Repeat with remaining tortillas, cojack cheese and onion. Pour enchilada sauce over all. Sprinkle with cheddar cheese down the center. Top with green onion. Bake at 350° for about 20 minutes or until heated through.
Last night, we had One Dish Chicken Lo Mein. This is a recipe I haven't used in a long time, but I'm going through my favorites binder and revisiting old favorites. Even my Chinese-food-resistant husband likes this!
ONE-DISH CHICKEN LO MEIN
1 tbsp. dark sesame oil
1 lb. boneless, skinless chicken breasts, cut into thin strips
2 (14 oz. each) cans low-sodium chicken broth
1 cup water
1 tbsp. minced ginger root
1/2 tsp. crushed red pepper flakes
3 tbsp. teriyaki sauce
1 large clove garlic, minced
8 oz. spaghetti, uncooked
16 oz. pkg. frozen broccoli, carrot, red pepper and water chesnut combination
2 green onions, sliced
In a skillet, heat sesame oil over medium-high heat; brown chicken, about 3 minutes. Remove to plate.
In same pan, bring broth, water, ginger, pepper flakes, teriyaki sauce and garlic to boiling; add spaghetti. Simmer, covered, 8 minutes, stirring often.
Stir in vegetables and chicken. Bring to boiling; simmer, covered, 4 minutes. Stir in onions.
Yield: 4 servings
Note: I often substitute the vegetables for our favorites (even fresh). Last night I used 12 oz. fresh bean sprouts, 1 thinly sliced carrot, a handful of snow peas, half a red bell pepper cut into squares, and about 6 halved mushrooms.
The pepper flakes give it a nice heat, but you can adjust that to your taste.

Everyone in this SW corner of Oregon is getting very bored with the rain this year. I have never seen so much. Last winter we were so dry that DH wanted to start planting the garden. At least we never have snow here.
The chicken paprika in the crock pot smells fabuloso! Can't wait until kids get home and get excited about a hot meal! Guess I've been kind of lazy lately...

Heated up some tortillas and put some spanish rice and fat free refried beans with some taco sauce on them and rolled and that was supper! Picked up some reduced caesar salad we had with them; what a combination, but it filled us up!
A long day and the dealer couldn't find anything wrong with my truck! They told me to drive it another month and see if it happens again! Yeah, it probably will; when I'm out in the middle of no where again!
