Hope you all are doing good and looking forward to your extended weekend. I know we are. Unfortunately my hubby will be working Monday, but the extra money is always useful!!!

Survivor cake was DELICIOUS!!! Got plenty of it leftover for the next few days.

Dinner tonight is lasagna and salad.

Last night I ended up having ramen noodles with a few shrimp in it. I was busy and wanted something that I could eat with a spoon.

Tonight, I want to relax, kick back, and get caught up on studying, online quizes, and papers that I have to write, which also require a lot of reading. So, I'm treating myself to some crabcakes with homemade tartar sauce (I made yesterday so that the flavors with marry) and I'm going to break my own rule and make box mac and cheese. Don't have time to make it from scratch tonight.

Ahhhhh Debora.. It sounds like you are having your version of comfort food "crab cakes".

My MIL invited us for dinner as well. She is serving Chinese Chicken Salad, well at least that was what was on the menu before she found out her DS was coming because there's no overtime this weekend.

Had BLT's yesterday cooked 2 lbs of bacon so today we had eggs, leftover bacon and toast for lunch and had grilled cheese sandwiches for dinner with bannanas.

Tonight will just be leftovers. Today or tomorrow I too will be frying up bacon so that I will have it to make wraps for lunches for school.

Yes, crab cakes are indeed--comfort food. I just cannot eat the store bought tartar sauce.

Dinner tonight is going to be burgers. We just love the recipe that Debbie posted.

I'm also going to have dh grill some chicken and zuccini (sp?).

We were supposed to have the burgers last night, but ended up in the ER with DS. Looked like he broke his ankle, but thankfully it's a sprain. He's on crutches until Tuesday. If it is not walkable by then, it's another round of visits to the orthopedic dr. Thanks goodness for insuance.

Tomorrow I will be cooking for the week. Starting to plan my menu now.

DeBora, I just love crab cakes. I haven't made them in a while. I should put them on my menu real soon.

Danstigerangel, Sorry to hear about your son's ankle. Hopefully things will be better for him by Tuesday.


All of this talk of bacon make me want a BLT. We eat turkey bacon in our house. I usually have at least one pack in the freezer but of course since I want it, I dont have any. Just my luck.

We are grilling today..... simple things, hot dogs and chicken burgers.

I've made a promise to my neighbor that if she makes coleslaw, I will try a "Carolina hot dog"---a hot dog with chili and slaw. I cant imagine what that's going to taste like but I live by the rule that I teach my kids--you can't say that you dont like something if you haven't tried it. Wish me luck!!

It's a beautiful day here so we will probably spend most of it outdoors.

The house is clean so Im off to take a shower!!
