Hot pockets

Emmalee, I tried to e-mail (too large for PM) but you aren't set up for e-mail through here so I'm just posting. I have no idea where this is on-site, I just happen to have the recipe. BTW we named them "Jeannie Pockets" on the WFD? thread sinc Jeannie shared the recipe with us.

I recenlty made some and cheated--using egg roll wrappers. I had been cooking for about a week to freeze stuff and was worn out so took the easy way. This recipe really is super easy though.

Homemade Hot (Jeannie) Pockets ====================

Dough:

1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 tablespoons oil
1 teaspoon salt
2 3/4 to 3 1/4 cups flour

Dissolve yeast in warm water.
Add sugar. Let it set for a few minutes until foamy (if you're using
fast-rise yeast, you can just add the yeast with the flour and go on).

Then stir in oil, salt, and flour. Knead 5 minutes.

Let sit 5 minutes.

Divide dough into 6 pieces.

Roll and pat each piece into a circle (about 6-inches across or so).

Top half of each circle with filling of choice, keeping back from edges so it will seal well.

Fold the other 1/2 of circle over the filling and pinch sides together or seal with a fork.

Poke a couple steam vents and bake for 20 minutes at 375F.

For pizza pockets, fill this with a little pizza sauce, then mushrooms, pepperoni, cheese, etc.

Also, try with cream soup, chopped cooked chicken and steamed broccoli and some shredded cheese.

Use your leftovers and imagination to create something special!

The pockets were absolutely wonderful--light and fluffy even though I usually can't make anything with yeast unless it's in the bread machine.

Oh, I forgot to mention something we did yesterday! I wanted to go for a drive with the family, so we went to a nearby area where they grow onions. The kids walked down the side of the road and found me 5 big red onions, they were thrown to the side of the road from harvesting. We'll go back this week and gather more of the sides off the road, they fall from the trucks when they turn corners or go over the railroad tracks, and they're free for the pickin! Usually it's just yellow onions, so the red ones were a treat!

Neat, free onions!

I know in Tennessee there was an Apple tree in an empty lot and dd and I went and picked a whole bunch of them. Then walking down the street, there was a tree that was bearing pecans that was overflowing on a public street so dd and I gathered them up-Talk about yummy!!!

Well, today I had to go get a cake pan so that I could bake myself a birthday cake for Wednesday. Normally I wouldn't do nothing but dd is excited, so I had to do it. I got a cake preserver too for $2.99. I went to the store and got some icing, it was on sale at 2 for $3...Dunkin Hines. I got the White Chocolate Almond one...only one for $1.50. They had eggs on sale...not the best sale but I needed eggs so I got them for $1. And the milk was horribly outrageous at $3.29. I hate that I don't have my deep freezer to be able to stock up. But, oh well...

I guess I'll have to tell my chicken pox story. I was the youngest of five kids & everybody had it before I was born. I guess I never got it from anyone at school. So there I was in my senior year of college. My sisters & I were meeting for the weekend at my Grandmothers house. Well, my nephew had the chicken pox & stayed home while my sister came for the weekend. I guess I shouldn't have hugged her, because I later came down with the chicken pox. It was spring break when I was actually sick (THE WHOLE WEEK.) In the sprirt of justice, I went to my sister's for her to take care of my while I was sick. I didn't have too many pox, but I was really wiped out. I was exhaused walking from the bed to the couch. Even after I was well, I still got sick (short term, throw up type sick) about every two weeks for a while. Now that nephew is a freshman in college. I have three years to think of some virus to give him during his senior year spring break! He thought it was amusing to say, "You can say I never gave you anything."

YIPPEE...I GOT 2 GOOD THINGS TODAY.

first ..i sold one of the reciners i had for sale. i got 20 for it. used it for gas, milk, and bread. plus 3 for laundry.
plus got the check from modest needs for moving the house. now gota go give that to the guy for that.

and best of all..my sil said she will go horseback riding with me tommrow at 10 so i can take out my big ol doggy horse and ride. i havent gone riding for aobut a month, month and a half. im sooo excited. she works 3rd shift so her getting up at 930 to go with me is a big deal. shes my favorite sister in law for sure!!

well gota go..free cone day at dq is also sons 12th bday.i told him wed go for ice cream after school. better be getting around.

Somehow I always find, at the end of the day, I have something frugal!

One of the ladies from church brough over some homemad stew, bread and freezer jam (strawberry!) for the kids and me.

I am going to freeze the stew and save it for when I am in the hospital or at home TRYING to recover afterwards. That will make it a little easier on dh.

The bread and jam WILL be GONE before dh gets home. Sorry honey - them's the breaks for leaving me with four kids for almost 7 weeks!

Jayne I am so sorry I didn't even realize you couldn't e-mail me until you said something. Thank so much for the recipe. DS was reading over my should and got all excited about the pockets.
My frugal thing for the day was saving our house. I was coming home from picking up the kids when I notice that the farmer behind us was burning his field. I went around back to look at it. The fire had jumped the ditch and was about a foot away from the house. Scared me to death. So I had to run (i don't run ) and get a shovel. Ten minutes later a frantic farmer shows up and helps me put it out the rest of the way. All the time apologizing to me and thanking me. Gosh I don't even want to think what would have happened if Ihadn't came home when I did. Well alls well that ends well. Have a wonderful day all.

UNBELIEVABLE! Are you still shaking or calm? I think I'd still be shaking right now if I were you.
