Shrimp, Broccoli & Sun Dried Tomatoes Scampi

Shrimp, Broccoli & Sun Dried Tomatoes Scampi

1/2 pound shrimp, peeled & deveined (I use 2 packages of the frozen salad shrimp, thawed)
2 C fresh broccoli florets (I use frozen but partially cook them first)
1 8-oz. jar oil-packed sun dried tomatoes
1/2 tsp. minced garlic
1/2C butter
1 pkg. angel hair pasta

Cook angel hair pasta as directed.

In a large saute pan, heat the oil from the sun dried tomatoes & add butter. When butter is melted, add garlic and saute for about 1 min. Add shelled & deveined shrimp. Cook until shrimp are done (about 5 min) Add broccoli florets and cook 3-4 minutes. Serve pasta on dinner plates and put sauce over it.

Congrats Sammi. I can't try it because I am allergic to shrimp. But I bet it's good.

A very good meal served with a nice veggie salad. We eat a lot of seafood and this dish was enjoyed by the whole family. Quick, easy and DELICIOUS!!
