Asian Chicken Salad
2 large boneless skinless chicken breasts (2 large breast = about 1 lb)
1/4 cup Soy Sauce
1 cup low fat sesame-ginger dressing
1 cup fresh snow peas, cut in half
1/2 cup chopped green onions
1/2 cup Sliced Water Chestnuts, drained
4 cups chopped iceberg lettuce
4 cups chopped romaine lettuce
1 can (11 oz each) mandarin oranges, drained
1 cup Chow Mein Noodles
1/2 cup sliced almonds, lightly toasted
Place chicken in medium bowl. Pour soy sauce over chicken and marinate for 30 minutes. Fry chicken until no longer pink.
Pour dressing into medium bowl.
Add chicken, pea pods, green onions, and water chestnuts; toss lightly. Chill in refrigerator 15 minutes or until serving time.
Toss lettuce, oranges, chow mein noodles and almonds together in serving bowl. Top with chicken mixture and serve with additional dressing, if desired.
