One of those woman's mags...the kind at the grocers always has a new weight loss plan on the cover.... well they had a $1 meals. One was stuffed peppers, I am sure if the peppers are on sale....and you use little meat...actually where I work they use to make vegetarian stuffed peppers with bulgar wheat...very good....I think the mag is called Woman's World....just thought you could take a look at the library....

Catlady, Just want to pop in and say that I LOVE that magazine! I always get tons of ideas from it. I have a whole pile ready to be donated to our hospital now that Im done reading them. Boy is DH happy about that! ;-)

Tuna and Rice

3Twinkles, I had a friend who used to make something like your dish, on top of the stove, but he used rice.

It was cooked, hot rice, mixed with a can of drained tuna, Cream of mushroom soup, peas and a little milk, S&P ..and I think that was it... He would stir it up on top of the stove and when he served it he would sprinkle the top with some grated cheese.

I remember it as comfort food for a cold evening. I haven't had that for about the past 20 years! But I remember it was good. Hmmmm I wonder if I have tuna in the house......

LIFESTAR that sounds wonderful.my family loves rice too.thank you for that receipe.i'll have to leave out the peas though.i'm the only one that likes them.

I have been lurking abit and here you are! How are things going, are you healthy and happy? No more weight loss here, but, still maintaining my 15 pound loss, so much better than the 15 I would have gained in that time period. How are things with you? I love Womans World, too, my favorite mag.

We have several cheap meals that we love. Our kids still make them as their families love them too.

1. Poor man plate......A baked potato, with your choice of topping. (cottage cheese, butter, sour cream, cheese or salsa) I serve 2 sides of veggies then with it, and a salad.

2. Baked weiners, baked potatoes, baked beans, & green beans.
(place weiners in casserole, slice 1 onion thinly over top. Add can of tomato soup, sweetened with brown sugar.)

3. Fry up hamburger with chopped onion, and add a can of pork & beans. Heat through. Salad, and rolls.

4. Hot chicken sandwiches. (I cook chicken, debone, and shred & add cream of chicken soup, and crushed chips or crackers.) Heat through and place on bun. (We like mayo and onions sliced thin on it.)

One more.....

The above post reminded me of one of our ole standbys, we call it Neima surprise because my mom gave me the recipe she got from her dad.

Simply brown a pound of hamburger meat with onion, drain, add 1-2 cups cooked rice and a can of cream of chicken soup, a can of cream of mushroom soup, or a can of cream of celery soup. I also add a small can of mushrooms ($.50). Let simmer on low, stir frequently, for about 10-20 minutes. Will be thick. You can add more cans of soup if you like(we mix and match), more rice, etc. It is kinda like homemade hamburger helper. Oh, yeah, salt and pepper to taste.

MMM, making me hungry, might make it tonite.

**We always use the store brands of the cream soups, cheap and good.

I love this thread. Im getting so many tips to add to my notebook. Who cant use some cheap dinner ideas? I make your recipe every once in a while for us. I also make scalloped potatoes that way....its my MILs recipe.


Scalloped Potatoes

thin sliced potatoes--I dont bother peeling them but you can if you want to

1 can of cr. of mush. soup
1 can of cr. of celery soup
any kind of leftover meat like ham, bacon, pork tenderloin,chicken and even hamburger
I throw in a small can of mushrooms too

I slice all of the potatoes and throw in an oblong dish then mix the 2 cans of soup with 1 can of milk ( I use skim). Pour over potatoes. Sprinkle with a little flour , add meat and mix all together. Cover with foil and bake about an hour. Remove cover and bake about 10 minutes.

This makes a lot ...a pan a little bigger than a 9x13 so if youre making a smaller portion, adjust the soup amt.

Love your recipe idea, I so need to use some some potatoes, they are growing out of our ears. Hubby got a fifty pound bag, free, from work. Yikes, who eats 50 pounds of potatoes?...lol

I apologize.....

For using this thread as my personal catch up link. For this I owe another recipe idea......

Chef Salad

Lettuce($.99)
Tomato($1.49/pound)
1 boiled egg($.99/dozen)
bacon($1.99, get the cheap stuff for this recipe)
shredded cheese($2.87/pound)
ham, turkey, chicken, whatever is on sale, or left over.($ ? )

The prices add up to more than five dollars, but, you wont use the whole dozen eggs, or the whole pound of cheese.

Shred as much lettuce as you need, use lots for filling tummys. Slice tomatoes, as many as desired. Boil one egg for each salad to be made. Fry some bacon for crumbling on top. Slice and chop as much meat (deli meats work great, too) and top with shredded cheese. THis is actually filling. it has the proteins, too for satisfying. Top with favorite salad dressing. If you use alot of lettuce, family thinks is alot of food.
