One of our favorite cheap dinners is good old hot dogs and Ranch style (some places call them "chili") beans. When hot dogs go on sale, I buy several packages and keep them in the freezer. Buns I usually get for 99 cents per package of eight, and Ranch-style beans are about 60 cents a can for name-brand.

Bean-and-cheese burritos can be made cheaply, even with canned beans. A little salsa or taco sauce and they've got some zip.

Quesadillas can be filled with cheese and just about anything you've got in the house: bits of ham, chicken, turkey, taco meat, veggies, whatever. DS#2 likes bacon-and-cheese quesadillas, while everyone else eats cheese-and-whatever quesadillas.

Another cheap dinner we've had that everyone in the house eats:

~Aztec Black Beans~
1 lb. dried black beans or turtle beans
1 16-oz jar salsa, your favorite kind

Rinse the beans, removing any stones or foreign objects. Cover and soak them overnight.

Drain the beans and put them in the crockpot with the salsa. Pour enough water over all just to cover. Cover and cook on low for 8-10 hours. Serve with rice.

My new cheap meal is buying the menu box from Angel Food Ministries for $28-32 you get 7 meals to feed a family of 4.

Catwomen those Aztec black beans sound good with rice & cheese rolled in a shell would make a great tasty meal.

I like to buy either the cheap leg quarters or thighs and bake them in Italian dressing(.99) or less, Rice a roni(aldi's brand)(.60) and a can of corn(.50)

We do an all you can eat night here at the house but I still end up eating leftovers for lunch.That is ok though.

cheap cut of beef. one pound. pasta and veggies cooked to gether with soy sause, five spice . meat sliced thin ,it seems like so much more and will serve a family of 4. Aldi's is a great place to shop. We get a lot of things cheaper than walmart or a local grocerry store

Wish we had an Aldi's here. I like using pasta as it is not that costly and goes a long way.

Really liked this thread. I got a lot of ideals again of what to cook. I like to cook ahead. If I get ground beef on sale, I brown it and split it up in about 3/4 lb bags. Sometimes, I will make a double batch of meatballs and a meatloaf all the same time. You can add bread crumbs for filler, shredded vegetables or crackers to extend your meatballs or meatloaf, to bring down the total cost of your meal.

Thumbs up Love that chicken

When I buy a nice plump chicken - about 5 lbs - for 99 cents a pound I get at least 3 meals for 2 out of it. First meal is chicken with gravy and veggies, second is sandwiches (either sliced or chicken salad) and third use is chiken soup. Always an economical deal.

I like to do the same thing. A lot of times I will make chicken, noodles and gravy, chicken soup and then chicken quesadillas - can fill more with cheese and rice or veggies if there's just a little chicken left over.
