Nanny's casserole

Ingredients-
enough leftover mashed potatoes for a 2 qt casserole/baking dish
1/3 lb chunk Genoa salami
1/3 chunk mozzarella cheese
Plain bread crumbs

Directions-
I warm the potatoes slightly in the microwave, if they seem stiff, add a little milk.
Cut the salami and mozzarella into small chunks and stir into the potatoes.
Grease the casserole/baking dish with butter then coat with the bread crumbs.
Put potatoes into the dish, cover with foil.
Bake for approximately 25 minutes at 350*.
I serve with meat loaf or chops.

If desired 10 minutes before cooking ends, sprinkle the top with additional bread crumbs and cook until golden.

My son, a very picky eater asks for this alot. He calls it Nanny's casserole because my mom, known as Nanny to the grandchildren, made this and he loves it.

I hate leftovers, so I have discovered many ways to use them so that they aren't really leftovers.

You can make a stew with leftover roast or steak.

With leftover roast, steak, or chicken, you can make quesadillas.

Leftover baked chicken can be turned into a casserole.

Keep a container in the freezer for leftover veggies that are too small to have as leftovers for a single serving. When the container is full, you can use the veggie mix to make a stew or soup.

Leftover mashed potatoes can be turned into potato pancakes. You can add onions, peas, pieces of ham, cheese, or anything else, to make the pancakes.

Meatloaf can be made into meatloaf sandwiches.

Leftover fish sticks can be make into fish stick tacos.
